Egg-Free, Cardamom Oatmeal Cookie Ice Cream

Kate Zuckerman, celebrated pastry chef and cousin to the Rock the Bike founder, has shared one of her ground breaking ice cream flavors with us, an egg-free, dairy recipe that uses natural thickeners to achieve the same results as egg based custards! Read her thoughts on developing egg-free custards for the home chef here!

Now put your hands (and legs!) to action and make this delicious recipe!

Cardamom Oatmeal Cookie Ice Cream

Ingredients:

5 cups heavy cream
7 ½ cups milk
1 ¾ cups cane sugar + 1 tablespoon
1 tsp. sea salt
1 tsp. vanilla extract
2 tablespoons cardamom pods
3 tablespoons rice flour mixed*
.75 g. xanthan gum (just less than ¼ tsp.)*
2.5 g. locust bean gum (3/4 tsp.)*
2 ½ cups oatmeal cookie crumbs

*Replaces egg

Method:

  1. Heat cream and milk up in a large pot. Add the sugar (except the extra tablespoon),
salt, vanilla. With a mortar and pestle, grind up the cardamom pods and add them to the
milk/cream mixture. Let this mixture come to a simmer.
  2. Meanwhile, weigh out the xanthan gum and locust bean gum and mix the gums into
the extra 1 tablespoon of sugar in a small bowl. Set it aside. Measure out the rice flour
and add it to the small bowl with the xanthan gum and locust bean gum.
  3. Once the milk/cream mixture is close to simmering, with a whisk, add the rice
flour/sugar/gum mixture. Whisk vigorously. Allow the mixture to simmer for a minute
and then remove it from the stove.
  4. Strain out the cardamom. Mix the oatmeal cookie crumbs into the hot ice cream base.
Chill the base over ice. Churn in the Immergood Ice Cream churn with the bike once the
    base is well chilled.

Kate Zuckerman — pastry chef, savory chef, cooking instructor, recipe tester, cookbook author, avid commuter/cargo cyclist and mother of three kids – acquired the ice cream/blender bike from her cousin Paul, inventor, musician, bike enthusiast and founder of Rock the Bike, and has been churning out sweet treats in Brooklyn with SweetCycle ever since!

Check out her recipe for Malted Banana Chip Vegan Ice Cream:

Ingredients:
3 cups cashew milk
2 cans coconut milk (13.6 fl. ounce cans)
1 ¼ cups maple syrup

What kind of vehicle should I use to transport the Pro frame?

Jun 10, 2016Posted by in Electric Fender Blender Pro, FAQ, Fender Blender Pro, Generator Pro, Ice Cream Bike, Ice Cream Bike Pro Pedal Powered Ice Cream Maker, Icycleta Ice Cream Bike Attachment for Fender Blender Pros, One Bike One Speaker, Recharge Station, sLEDgehammer, Spin Art for Fender Blenders | Comments Off on What kind of vehicle should I use to transport the Pro frame?

What kind of vehicle should I use to transport the Pro frame?

Most hatchback style cars can usually fit at least one partially disassembled Pro frame inside. You’ll want to use a car with a large trunk; it’s even better if the back seats fold down to extend the trunk space.

A pickup truck can carry 2-4 fully built Pro frames in the bed. Most SUVs can carry a single Pro frame in the trunk with no disassembly. Smaller cars may probably require some small adjustments or disassembly such as lowering the handlebars, dropping the saddle, or removing the crossbar to fit in the trunk or back seat.

Most vehicles can fit 2 bike blenders with small adjustments or disassembly. We will provide the hex wrenches you’ll need to reassemble the bike again at your destination.

Any car will work if you’re using a regular bike rack.

A roof rack can help if you want to use a small car and don’t want to do any disassembly. Here’s a photo to show roof rack use and size comparison.

We encourage you to try bike towing with your rental bike. It’s fun, safe, practical and reduces the carbon footprint of your event, and there is no disassembly required! Any bicycle with a rear rack can tow the Fender Blender Pro. There is no extra rental charge for the trailer wheels and hitch, or you can purchase the Tow Kit to travel with your bike blender.
