Pumpkin Salsa – Bike Blender Recipe

In the season of #pumpkinspiceeverything we have a delicious snack that is sure to satisfy your pumpkin cravings and save you from those extra latte calories. Rock the Bike’s Pumpkin Salsa can be made in our High Performance bike blenders, whether you have the Pro or the Universale models. We recently served this recipe at two Nob Hill Foods locations, one in Redwood City and the other in Capitola. The salsa got GREAT reviews, and many came back for recipe cards after trying the salsa. You’re sure to love this!

Pumpkin Salsa

PUMPKIN SALSA

Prep: 10 minutes
Serves: 9 1/4 cup servings
**Note: This recipe requires the Spoonula for the best consistency**

Ingredients:
1 cup canned pumpkin
1/4 small white onion, chopped
1 jalapeno pepper, seeded and chopped
2 garlic cloves, minced, or 1 TBSP minced garlic
2 tsp sea salt
3 medium tomatoes, quartered
1/2 cup cilantro leaves (about 1/4 a bunch)
Juice of 1/2 of a lime

 

Prep It In Your Pitcher:
1. Place the pumpkin, onion, jalapeno, garlic and salt in your Blendtec pitcher. Blend slowly, while you or a friend tampers the ingredients back into the pitcher from the sides with the Spoonula.
2. After about 1-2 minutes of slow pedaling start to add in your quartered tomatoes. Keep blending slowly.
3. While slowly pedaling add the cilantro and juice of half a lime. You can serve this fresh, or cover it and refrigerate for later enjoyment.
